Poha is a quick, easy and healthy option for breakfast, brunch or snack. With high nutritional value, Poha is considered one of the healthiest breakfast. It's a wholesome meal as it is a good source of carbohydrates, packed with iron, fiber and is a good source of antioxidants.
Cooking steps
1. Use a strainer to rinse 1.5 cup Poha in water, until they soften.
2. Add 1 teaspoon sugar, salt as per taste and 1/4 teaspoon turmeric powder to Poha and gently mix it with spoon.
3. Heat oil in a pan and add mustard seeds. Crackle them and add 1/2 cup chopped onions and saute them. Add 10-12 curry leaves and 1 finely chopped green chilly. Saute them and add roasted peanuts.
4. Add Poha and mix gently. Cover it and steam it for 2 mins on low heat.
5. Remove lid and sprinkle 1 tbsp lemon juice and garnish it with coriander leaves.
