Red Potatoes are small to medium in size and are round or oval with a somewhat uniform shape. The thin skin is ruby to deep red and is smooth with some light brown speckling, spots, and indentations. There are also a few medium-set eyes found across the surface of the skin. The flesh is crisp, white, and firm.
Red Potatoes contain vitamin C, fiber, and some iron. They are best suited for cooked applications such as boiling, mashing, baking, or roasting. They readily absorb accompanying flavors and offer a textural element in a variety of dishes both cold and hot. Red potatoes are considered an excellent salad potato because they hold their shape well when cooked and can be roasted and smashed when small in size.
