Winter Warm-Up Recipies

Hey folks, its that time of the year again with cold nights and chilly, foggy mornings setting in. Our blogpost today is all about keeping you cosy with some hearty winter recipes. The star ingredients are veggies and fruits (apologies carnivores!) that are available during this season (and whatever isn’t can be sourced from us) . Let’s start with an effortless Pumpkin Soup followed by Ratatouille and finish off with a warm Fruit Salad. All recipes serve 4.

Pumpkin Soup

2 cups pumpkin puree

1 teaspoon chopped parsley

½ cup chopped onion

½ teaspoon thyme

2 cloves garlic

½ cup cream

Salt and pepper to taste

In a saucepan, heat up the pumpkin, onion, thyme, garlic, salt and peppercorns in three cups of water (or vegetable stock, if you prefer). Once boiling, reduce heat and simmer uncovered for ½ an hour. Then, puree the soup 1 cup at a time. Once puréed, return to saucepan and boil then simmer uncovered for another ½ hour. Take off flame and add the cream. Serve garnished with parsley.

Quarter cup olive oil (preferably extra virgin)

1 eggplant, cut into 1 inch cubes

2 medium green zucchini chopped into cubes

2 medium red onions cut into thick slices

1 red and 1 yellow bell pepper cut into 1 inch pieces

2 garlic cloves, crushed

Fresh rosemary and parsley

4 medium tomatoes, cut into 4 pieces each

Tumble all ingredients (except parsley) in a baking dish and pop it into the oven (200 deg C should do it) for 40 to 50 minutes. Serve garnished with parsley.

Warm Fruit Salad
4 green kiwi fruit, peeled
2 bananas, peeled
12 strawberries

14 cherries, pitted
2 plums, pitted

Juice of ½ lemon

50 g dark chocolate, grated

Cut the fruit into convenient sized pieces and place in a baking dish. Squeeze in ½ a lemon and stir in. Generously sprinkle grated chocolate over the fruit. Place dish in a warm oven oven till the chocolate melts and the fruit warms through. Serve with greek yogurt, whipped cream or vanilla ice cream.
